Serves 1 (can easily be multiplied)


  • 1 small Napa cabbage
  • 1 chicken breast, pre cooked (store bought/poached/baked anything will do)
  • 1 small mango
  • 1 medium bell pepper
  • 1 small cucumber
  • 1 shallot
  • 1 jalapeño
  • handful of cilantro
  • ¼ cup raw cashews
  • 2 tbs oil (avocado, olive or macadamia)
  • juice of 1 large lime
  • ½ tsp salt



  1. Chop the napa cabbage, cucumbers, peppers and mango into strips
  2. Shred the chicken breast
  3. Slice the shallot finely into rounds
  4. Chop the cilantro and jalapeño finely (if you prefer less spice, cut out the seeds and membranes of the jalapeño)
  5. Chop half of the cashews and leave the other half whole for a mix of texture
  6. Add everything into a bowl and mix together with oil and lime juice and season with salt to taste
