Serves 1 (can easily be multiplied)
Ingredients
- 1 small Napa cabbage
- 1 chicken breast, pre cooked (store bought/poached/baked anything will do)
- 1 small mango
- 1 medium bell pepper
- 1 small cucumber
- 1 shallot
- 1 jalapeño
- handful of cilantro
- ¼ cup raw cashews
- 2 tbs oil (avocado, olive or macadamia)
- juice of 1 large lime
- ½ tsp salt
Instructions
- Chop the napa cabbage, cucumbers, peppers and mango into strips
- Shred the chicken breast
- Slice the shallot finely into rounds
- Chop the cilantro and jalapeño finely (if you prefer less spice, cut out the seeds and membranes of the jalapeño)
- Chop half of the cashews and leave the other half whole for a mix of texture
- Add everything into a bowl and mix together with oil and lime juice and season with salt to taste
